WOW Wellness Hub: A Hearty Vegan Chili for those Chilly π Winter Days
At Healthy Acadia, our commitment to fostering staff wellness is at the forefront of our mission. As we embark on a new year, we are thrilled to introduce you to our WOW (Working on Wellness) team, dedicated to curating resources that promote staff wellness and that we can share with our community.
This week, we're delighted to share a delectable Vegan Chili recipe from our very own Audra Stewart-Gordon, Community Health and Communications Coordinator. It's the perfect comfort food for these chilly π winter days.
Recipe: Healthy Vegan Chili
Ingredients:
o 1 can of black beans, rinsed
o 1 jar of Taste of Inspirations corn and black bean salsa
o 1 small sweet onion, diced
o 1 small jalapeno, diced (optional)
o 1 package of Beyond Meat burger
o 1 cup of water
To Make:
1. Cook the burger until browned.
2. Add all of the ingredients into a crockpot.
3. Cook on medium for 4-6 hours.
Recipe notes/tips: Serve with vegetarian cornbread, salad, or other healthy options.
